In Japanese there are two words read as sui, and we loved them both enough to name our restaurant after them.

The first means water: 水. It is one of the five elements; it has no shape yet takes every shape, no voice yet wears down the hardest rock. Sushi is an art of water from beginning to end; the water in the rice, the water in the tea, the water of the sea that brings the fish.

The second is written 粋, and it has been a key idea of Japanese aesthetics since the Edo period: elegance without strain, refinement stripped of excess. Born among the merchants and craftsmen of Edo, this ideal stands squarely opposite showing off; three colors on a plate, one clear taste in a bite.

The Sui Roll is our promise to those two words. Inside it is the fish our counter trusts most that day, rice cooked fresh every morning, and a composition whose only extravagance is its balance. We do not write out the rest of the recipe, because the true recipe is already written inside a two-syllable word.

If the clarity of the Mediterranean could fit into one bite, this is the taste we would wish for it.
